- 5-6 russet potatoes. medium sized.
- bacon grease
- 1/2 lb bacon - crispy
- 1-2 cloves garlic
- parsley
- onions suggested -
- shredded cheddar cheese - maybe 1/2 cup

Instructions
- cut up potatoes into approx 1/2 " cubes. rinse thoroughly and pat dry
- warm up the cast iron pan. Melt some bacon grease in it, or cook up a half pound of bacon to crispy
- add a clove or 2 of garlic. Or 2/3 teaspoon pre-minced garlic.
- add an onion slice/ diced onion . Use as much as you prefer
- put cut up potatoes into the pan. season with salt and pepper.
- cook covered for about 10 minutes, stirring occasionally
- uncover, cook some more (to boil off water). about 5-7 minutes.
- re-cover, cook a bit more - test for doneness, and crispness of potatoes.
- break bacon into bits, and add to pan. stir
- sprinkle shredded cheddar cheese and parsley on top, cover, and remove from heat
- eat when ready!
