cheesy-ish potatoes
Instructions
  1. cut up potatoes into approx 1/2 " cubes. rinse thoroughly and pat dry
  2. warm up the cast iron pan. Melt some bacon grease in it, or cook up a half pound of bacon to crispy
  3. add a clove or 2 of garlic. Or 2/3 teaspoon pre-minced garlic.
  4. add an onion slice/ diced onion . Use as much as you prefer
  5. put cut up potatoes into the pan. season with salt and pepper.
  6. cook covered for about 10 minutes, stirring occasionally
  7. uncover, cook some more (to boil off water). about 5-7 minutes.
  8. re-cover, cook a bit more - test for doneness, and crispness of potatoes.
  9. break bacon into bits, and add to pan. stir
  10. sprinkle shredded cheddar cheese and parsley on top, cover, and remove from heat
  11. eat when ready!
