Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 3 green onions thinly sliced optional
- 1/4 cup salsa
- 1 cup Mexican blend cheese finely shredded quantity divided
- 4 large eggs
- 2/3 cup heavy cream
- 1/2 teaspoon sea salt

- preheat oven to 350 degrees
- brown ground beef in a cast iron pan
- drain beef
- stir in taco seasoning according to package directions; set aside
- in a large bowl, combine the eggs and heavy cream. Whisk thoroughly
- stir in green onions, salsa, and 3/4 cup cheese; mix all ingredients thoroughly
- pour into pan with taco meat
- sprinkle remaining cheese on top
- bake in oven approx. 35-45 minutes
- remove from oven. cool.
- grind up tortilla chips and sprinkle on top of each serving. Add a spoon of salsa if desired
